Creamy Kale Linguine

After watching the new Disney/Pixar offering - Luca (go watch it, it’s great but it will make you cry - but in a nice way), we were in the mood for some pasta!

Linguine is a great alternative to the more commonly used spaghetti, it means ‘little tongues’ in Italian but don’t let that put you off.

This beautifully fresh, creamy dish with hints of lemon and herby kale will be a real pleaser.

Serves 4.

Approx 165g kale

360g linguine

1 tin chickpeas

Creamy sauce

80g tahini

80ml water

Juice of a lemon

2-3 cloves garlic

1/4 tsp salt

Pepper

To serve

Pine nuts

Nutritional yeast or parmesan

METHOD

1. Boil a large saucepan of water, add linguine and cook according to packet instructions. Steam the kale on top or boil in the saucepan with the linguine.

2. While the linguine & kale cook, make the creamy sauce by whisking all ingredients together until smooth.

3. Drain the linguine, reserving a bit of the cooking water. Return to the saucepan along with the chickpeas, kale and sauce and warm through. If the pasta gets a bit sticky, add a swig of boiling water from the kettle. Serve sprinkled with pine nuts and either nutritional yeast or parmesan.
