How to save your scraps!

No matter how good you are at managing your shop and being mindful of waste while you cook,
we all end up with scraps.

From the ends of carrots to the stalks of broccoli, we have learnt behaviours when it comes to preparing meals that mean we throw away far more than is necessary, more often than not.

Here are our top tips for using your scraps - instead of throwing them in the food recycling bin!

 

Peels from Vegetables

So what should you do with onion skin and ends, celery leaves, mushroom stalks and all the other bits we cut off?

Make a veggie stock of course! Just gather your scraps and add to a bag in the freezer until you have enough (probably about 500g per litre of stock you’d like) and get going.

A good stock can seriously elevate a soup or casserole! And the best bit, you can even freeze the stock so you’ll have it to hand for up to 6 months!

Just save the broccoli/kale/cauliflower for other uses or their own stock - it can make it bitter.

 

Smoothies

Vegetable and fruit skins actually contain loads of nutrients which we tend to waste.

Fibre, vitamins, minerals and antioxidants can all be found on the outside of your favourite plant based produce, so rather than ditch it, pitch it into your smoothie maker - it all gets blitzed to oblivion and you won’t even know it’s there!

 

save the Stalks

Broccoli and Cauliflower stalks are criminally under used, and completely edible! Just shave off the tough outer skin and use alongside the florets you’re using.

You can also use them like you would celery stalks on crudite plates or add to soups.

 

Get Adventurous!

And if you have a garden you could always consider getting a compost bin or a wormery and get into the habit of using your scraps to enhancing your back yard and returning vital nutrients to nature.

 

There really are so many ways to use what we usually throw away from our fresh produce, and there are so many more ways to save these scraps, just give your usual culprits a google to find out some more suggestions!
